Cheap & Healthy Vegetarian Taco Tuesday

In this fast paced world it can be really tough to fit in a healthy well balanced meal with everything else going on. I believe health is the most important in our daily lives. If we aren't healthy how can we expect our bodies to endure what we put them through. Remember you would be nothing without your body so fuel the machine with the best you can! I am here to show you that a healthy cheap dinner is possible on the fly too. 


(My recipes are fun and easy: if you have something laying around that sounds good too toss it in!) 

Feeds 2 Adults or 4 children well: Under $15 (all of these are optional and you can add anything to taste)

  • Black Beans (1 can)
  • Pinto Beans (1 can)
  • Bell Peppers - I prefer red in this dish (1)
  • Cheese (1 cup)
  • Salsa (to taste)
  • Corn Tortillas (4-6)
  • (Meat Eaters - brown ground beef or turkey) (1/2 lb.)
  • Corn (2 can or 2 fresh cob)
  • Diced Tomatoes (1)
  • Cilantro
  • Cumin
  • Avocado 

In a pan on medium hit mix up the bell peppers, beans, 1/2 tomato, corn, tsp of cumin and couple pinches of cilantro. 

In separate bowl mix remaining corn, juice from 1 lime (to taste), remaining tomato, and avocado, sprinkle cumin, salt, and pepper. Set aside. Place corn tortillas on plates ( heating up or browning on stove is up to you) fill tortillas with veggie taco mix in pan and fill a bowl with the corn salad!) Add cheese and salsa to taste! 

If you have more time quinoa is great in the salad and as well as spinach. You could turn this into a crock pot meal, a big taco salad, or even add pasta to make a really dressed up Mexican pasta salad! Whichever you are in the mood for it is easy with these simple cheap ingredients.
